The Opus editor simply uses Windows' current cursor set and the I-beam cursor in this default set should change colour to cyan or magenta automatically to contrast with the page background. However, if you find that this does not provide enough contrast, you could change your Windows cursor scheme to one which uses a larger or thicker I-beam.
To do this, click Start > Settings > Control Panel > Mouse, then select the Pointers tab. You should now be able to select from a number of preset cursor schemes - many of these schemes will dramatically change the cursor appearance, but there are a few (such as Windows Black) which offer a clear two-tone I-beam, contrasting nicely with all page colours.
