Would I be correct in assuming that Opus apps will work with touch screen equipment in exactly the same way as with interactive whiteboards?

Should be fine. I have created many educational resources for use in our Local Authority Schools and they work equally well on whiteboards and touchscreens (and of course on traditional monitors ).
